Sour Cherry Melting Moment Cookies
¾ cup butter, diced
½ cup icing sugar
Zest of 1 lemon, finely grated
1 cup all-purpose flour
3 Tbsp cornstarch
1 tsp baking powder
¼ tsp fine sea salt
½ jar Provisions Food Company Sour Cherry Paste or Wild Blueberry Paste
Icing sugar for dusting
Preheat the oven to 375 F. Line a 12-spot muffin pan with paper muffin cups. Set aside.
Cream the butter, icing sugar, and lemon zest together in the work bowl of a food processor. Whisk the flour, cornstarch, baking powder and salt together in a medium bowl and add to the butter mixture. Process the dough until it just comes together. The dough should be soft but not too sticky.
Roll the dough into 12 equal balls, gently pressing the balls into the muffin cups. Press your thumb in the middle of each piece of dough, as if you were making thumbprint cookies. Bake for about 15 minutes or until light golden. Remove from the oven.
Drop about 1 teaspoon of Provisions Food Company Sour Cherry Paste into the middle of each cake to fill the hole and lightly dust with icing sugar. Set aside for an hour or two to allow the jam to set. The cakes will keep in an airtight container for up to 4 days.
