Braised Beef Short Rib With French Onion Jus

Our chef crafted mouth-watering short rib recipe is made even more rich and flavourful with a french onion jus reduction!

We've tasked our in house chef - Matt Krupa - with creating the ultimate holiday feast using a Provisions Product in every dish. We had high expectations, but even we were blown away by the results! This Shortrib recipe, using Provisions French Onion Jam, is one of two delicious entrees to be enjoyed in the Holiday Feast Series, and we promise it will not disappoint! 

 

Braised Beef Short Rib With French Onion Jus

Ingredients:

  • 4-6lbs beef short ribs 
  • 1 onion
  • 4-6 cloves garlic 
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 carrot 
  • 1 litre beef stock
  • 1 litre red wine 

 

Braised Beef Short Rib with French Onion Jus


Instructions:

  1. In a large skillet on high heat, sear the pieces of short rib until well caramelized on each side.
  2. Remove from the skillet and place aside for now. In the same pan add your carrots, onions, and garlic. Sauté until a deep brown colour is achieved.
  3. Add the red wine and scrape the bottom of the pan to capture all the caramelized bits on the bottom of the skillet. Cook the wine until it is almost fully evaporated.
  4. Add back in the seared pieces of short rib and add in the beef stock. The stock should be just covering the pieces of meat, you can add some water or more stock if needed.
  5. Bring the skillet to a boil and then turn down to a simmer. Simmer the meat for about 2-3 hours. The meat should start to pull away from the bones. Try a piece to check tenderness, if it is still tough continue to simmer until desired tenderness is achieved. Prep Tip: If you have time, the past 5 steps are best done the day before and allow the meat to cool completely in the liquid and store in fridge overnight.
  6. The next day (or same day if you don't have time to do it overnight) warm the meat up in the liquid. Once warmed through remove the meat and store aside.
  7. Reduce the liquid in the pan by just over half, the liquid should become thicker.
  8. Add in the jar of Provisions French Onion Jam. Stir and mix well.
  9. Add in the warmed short rib and roll the pieces around in the liquid to fully glaze.
  10. Serve with your favourite sides and rich buttery whipped potatoes.
  11. Enjoy!
