SMOKY SEA SALT BUTTERNUT SQUASH
Smoky Sea Salt Butternut Squash
A quick and easy side dish perfect for any savoury winter feast.
Tender wedges of butternut squash are roasted to golden perfection with a sprinkle of Smoky Sea Salt that adds a subtle, savoury depth of flavour. This dish is a harmonious blend of soft textures and bold seasoning, making it an ideal companion to roasted savoury meats, hearty grains, or as a stand-alone vegetarian delight. Simple yet sophisticated, it's a crowd-pleaser for any occasion.
Ingredients:

2 whole butternut squash

200ml olive oil

1/2 lb unsalted butter

4 tbsp pumpkin seeds (toasted)

Provisions Smoky Sea Salt
Instructions:
- Place butter in a pan and melt on medium to low heat until butter becomes brown (careful not to burn). Tip: the browned butter will have a nutty aroma.
- Peel and cut the squash into bite size pieces, be sure to remove all seeds.
- Toss the squash pieces with the oil and season with half of the Smoky Sea Salt.
- Place on a baking sheet with a piece of parchment on the bottom and cook in oven at 375 for about 30-40 minutes until softened.
- Place roasted squash pieces in your favourite serving tray.
- Pour the browned butter over the squash until well coated.
- Season with the rest of the Smoky Sea Salt and garnish with toasted pumpkin seeds, and sliced green onion.
- Enjoy!
