Smoky Sea Salt Butternut Squash

A quick and easy side dish perfect for any savoury winter feast.

Tender wedges of butternut squash are roasted to golden perfection with a sprinkle of Smoky Sea Salt that adds a subtle, savoury depth of flavour. This dish is a harmonious blend of soft textures and bold seasoning, making it an ideal companion to roasted savoury meats, hearty grains, or as a stand-alone vegetarian delight. Simple yet sophisticated, it's a crowd-pleaser for any occasion.

 

Smoky Sea Salt Butternut Squash

Ingredients:

  • 2 whole butternut squash
  • 200ml olive oil
  • 1/2 lb unsalted butter
  • 4 tbsp pumpkin seeds (toasted)
  • Provisions Smoky Sea Salt

 


Instructions:

  1. Place butter in a pan and melt on medium to low heat until butter becomes brown (careful not to burn). Tip: the browned butter will have a nutty aroma.
  2. Peel and cut the squash into bite size pieces, be sure to remove all seeds. 
  3. Toss the squash pieces with the oil and season with half of the Smoky Sea Salt.
  4. Place on a baking sheet with a piece of parchment on the bottom and cook in oven at 375 for about 30-40 minutes until softened.
  5. Place roasted squash pieces in your favourite serving tray.
  6. Pour the browned butter over the squash until well coated.
  7. Season with the rest of the Smoky Sea Salt and garnish with toasted pumpkin seeds, and sliced green onion.
  8. Enjoy!
