Confit Duck Leg with Blueberry Lavender Jam Glaze

A decadent entrée of confit duck legs made even more luxurious using our Blueberry Lavender Jam as a final Glaze

The second entree in our Holiday feast series is a serious contender for best dish of the night! These confit duck legs are truly drool worthy, making the effort well worth the results.  With that said, a top hosting tip for the busy holiday season: you can use this glazing trick on just about any poultry recipe and it will automatically elevate the flavours and make it stand out as a special occasion dish. 

 

Ingredients:

  • 6 duck legs 
  • 1 Litre Duck Fat 
  • 2 cups kosher salt
  • garlic 
  • thyme
  • bay leaves
  • star anise 

 


Instructions:

Note: this recipe must be started the day before serving

  1. Create seasoning mixture by combining salt with garlic, bay leaves, thyme, star anise in a small bowl
  2. In a pan that will fit the duck legs in one layer, generously sprinkle the salt mixture on the bottom of the pan. Place the duck legs over the sprinkled mixture, and then generously sprinkle the salt mixture on to the top of the duck legs. You want the legs to be thoroughly covered in the seasoning.
  3. Allow this marinade in the fridge for at least 12 hours, but ideally 24hours. 
  4. After 24 hours remove duck legs and wash off salt mixture with cold running water and pat dry.  
  5. In a pot, warm duck fat and pour into your deep baking pan. Be careful this fat will be hot. 
  6. Gently place the duck legs into the pan to be fully submerged by the fat. Simmer the duck legs for about 1-2 hours. When almost done the top of the leg bone should be visible. Take one leg out and test for doneness. The meat should be tender and have a slight saltiness to it. 
  7. Once happy with desired doneness, take the pan off the heat and let cool completely with the duck legs still in the fat. 
  8. When ready to serve, remove the legs from the fat, layer them on to a baking sheet and roast in the oven at 375F until the skin becomes dark and crispy. Lather with Provisions Blueberry Lavender Jam and let bake for another 5-10 minutes allowing the glaze to caramelize.
  9. Serve and enjoy with your favourite side dishes.
