CRANBERRY BAKED BRIE & BUTTERNUT SQUASH DIP
Cranberry Baked Brie & Butternut Squash Dip
An Easy and Delicious Fall Inspired Appetizer
This delicious fall inspired dip is not only delicious but beautiful! Each scoop incorporates the melted cheese, sweet and tangy cranberry, sweet squash, and salty nuts and seeds into one crave worthy bite.
Ingredients:
- butternut squash
- walnuts
- toasted pumpkin seeds
- Provisions Classic Cranberry Sauce
- maple syrup
- olive oil
- white balsamic vinegar.
Shopping Tips:
- You can likely find pre-diced butternut squash at most grocery stores.
- Substitute walnuts for roasted chestnuts for a seasonal twist. One small bag is more than enough.
- If white balsamic vinegar isn’t available, apple cider vinegar works just as well.
Instructions:
1. Select a round oven safe baking dish that has a lip or a bowl.
2. Roast the butternut squash: Cut the squash into small cubes, then season with salt, pepper, olive oil, and maple syrup. Roast on a baking tray at 400°F for 20–25 minutes, or until tender. (Pre-diced squash can save you time.)
3. Once the Squash is softened, remove from the oven and push the squash to the sides to make room to place the cheese in the center of the dish. We recommend to remove some of the rind by either cutting sections off off or scoring the top and edges. This will make scooping the brie into the squash easy!
4. Top the Brie with a liberal amount -at least half a jar- of Provisions Classic Cranberry Sauce You can also place dollops within the ring of squash (highly recommended!), and place the dish back in the oven until you can feel that the cheese in melted through to the middle - about 20 minutes.
5. Remove dish from the oven and sprinkle crushed walnuts and pumpkin seeds around the entire dish.
8. Drizzle maple syrup, olive oil, and white balsamic vinegar over the entire dish, "as if dressing a salad".
9. Serve with crostini or fresh bread for dipping and enjoy!
